Garlic for good health!

Since garlic is best consumed raw, I can’t think of a better recipe (besides fresh salsa, since all of those ingredients are in season right now) than the classic French Aioli. If you are feeling just the slightest bit sniffly or under the weather, whip up some aioli and eat it with raw vegetables and you will feel better in a jiff! Recipe below.

 

If you are going to cook with garlic, the most important thing to remember in order to retain all of those amazing health benefits, is to crush, chop or mince your garlic 10 minutes before you add it to heat. This 10 minutes allows the healthy compounds to oxidize and thus stabilize so they are not lost during cooking.
